How are hotels selected for the Fine Dining Hotels collection?

Properties enter the collection on the basis of one or more of: a Michelin-starred hotel restaurant; a substantive farm-to-table or kitchen-garden programme; an award-winning chef in residence; a multi-restaurant gastronomic offering; or a long-established classical kitchen recognised in the major dining guides (Falstaff, Gault Millau, World's 50 Best). Our editorial team books and dines at every property before listing. Hotels with strong food and a single competent restaurant don't qualify — this collection is reserved for properties where the kitchen is itself a reason to stay.

What makes a fine dining hotel different from a hotel with a good restaurant?

A fine dining hotel has built the property around the kitchen. The chef is named, the cuisine has a clear identity, the cellar is considered, and the restaurant draws non-resident diners as a destination in its own right. A hotel with a good restaurant treats food as a service department. This collection only includes the former.

Do all the hotels have Michelin stars?

No. Michelin recognition is one route into the collection but not the only one. Many of the strongest entries hold Falstaff, Gault Millau or World's 50 Best recognition, or carry award-winning regional chefs whose work hasn't sought Michelin status. A few are pure farm-to-table operations where the food is exceptional but the format sits outside the Michelin framework.

Is fine dining the same as expensive dining?

You're expecting a nuanced 'no'. But the fact is that unless you're travelling to a remote off-the-map fishing village for a local seafood lunch, restaurants know their worth when it comes to authentic and exceptional food. That said, some of the collection's strongest food is served at country properties where the price reflects ingredient quality and chef talent rather than the urban-luxury premium attached to comparable city restaurants. Inland Italian, French and Greek properties often deliver Michelin-equivalent cuisine at a fraction of city prices.

Can I book a meal at these restaurants without staying at the hotel?

Most of the collection's restaurants accept non-resident bookings, subject to availability. Confirm directly with the property — peak season and special-event nights are often resident-only.
