Origins

Manfredi and Tommaso – owners, managers and brothers – opened the doors of Susafa in 2008 after 8 years of renovation. The site and original buildings of Susafa have been a part of their family for the previous five generations, though the area’s real story begins approximately 800 years ago where a community, who were determined to provide all the materials and resources they would need to thrive themselves, settled in the area. Their self-sufficient goal was a success, thus earning the village the name ‘SuSaFa’ meaning ‘they know how to do it’. It is steeped in this rich history from where Manfredi and Tommaso, spurred on by their mother, were inspired to rebuild Susafa with the same self-sufficiency goals, whilst providing high-end hospitality for their guests whilst in harmony with nature.

Top Secret

Susafa’s daily tasting menu (in addition to the a la carte menu), which is created anew every day inspired by whatever is ripe and ready from their gardens

The Review

The old Sicilian proverb, Casa quantu stai e tirrinu quantu viri’ (home for as long as you need to be, and land as far as the eye can see) is perfectly apt for the beautiful and secluded Susafa Hotel. Located an hour and a half drive from Sicily’s capital city, Palermo, separated by meandering roads and beautiful undulating hills which stretch far into the distance, Susafa is a luxurious and secluded getaway immersed in nature where guests are warmly welcomed into a tranquil piece of paradise.

Susafa’s owners, Manfredi and Tommaso, are immensely proud of the rich history of the site and this has inspired their vision of how the hotel is run. Determined to return to their roots and work in harmony with the natural environment, Susafa provides most of its own energy through their solar panels and all their water is sourced from on-site wells. Guests are encouraged to join walking tours of the beautiful gardens, covering approximately 7000 sq metres, which grow native fruits, vegetables and herbs. It is these gardens which inspire and sustain the talented chefs’ menus, which change according to the season. Susafa also has olive groves from which they produce their own oil and wheat fields from which delicious bread is baked daily on site.

When not relaxing in the tranquil gardens or swimming in the glistening pool which overlooks the spectacular Susafa hills, guests can drink local Sicilian wines in the elegant bar (whilst admiring pictures on the wall of Manfredi and Tomasso’s ancestors living and working on the site) or indulge in a relaxing massage. Guests are invited to partake in a variety of daily activities such as Sicilian cookery lessons, wine-tasting and cherry harvesting.  Breakfast, lunch and dinner are eaten in the site’s former granary, an enormous room full of character with beautiful arches and cobble-stone walls. Warm and attentive waiting staff, all who are from surrounding villages, have a sound knowledge of the menu and are keen to ensure guests feel special and looked after.

Elegant and purposely minimalist, the rooms at Susafa have contemporary designs but with classic features which pay homage to the history of Susafa, perfectly blending together the past and present. Beds and sofas are exceptionally comfortable, and grand solid French doors ensure complete peace, privacy and black-out darkness at night, guaranteeing a blissful night’s sleep. All rooms immediately open out on to beautifully manicured gardens from where guests can soak up the Sicilian sunshine.

Susafa is the perfect destination for couples who relish beautiful landscapes, tranquil settings, delicious food and indulgent comfort, all whilst respecting the beauty and history of the land.
