Hotel Gredič sits on a low hill at Ceglo, in the heart of Goriška Brda — the wine country in Slovenia's far west, hard against the Italian border, where the region spills over into the Italian Collio. People have called the place Gredič, "the little town," for as long as anyone can remember; a villa is documented on the site by 1774, and the slender round tower, with stone banding in the Venetian manner of the seventeenth century, hints that parts may be older still.

 

The castle takes its name from the Codelli barons, who held it for generations. They were a remarkable line: Baron Anton Codelli governed Gorizia in the Napoleonic years, while his descendant Baron Anton III Codelli (1875–1954) was an inventor of real daring — he patented an electric ignition system for cars in 1898, drove the first motor car ever seen in Slovenia from Vienna to Ljubljana, and was among the early pioneers of television. It is a fitting pedigree for a house that now trades on curiosity and good living rather than power.

 

A full renovation in 2012 brought the castle up to date while keeping its historic shell, and turned it to a single purpose: a small, wine-led retreat. There are just seven rooms and suites, individually furnished, with vineyard views and wine cabinets of their own. Below are the restaurant, with its five-course menus drawn from the forest, the vineyards and the nearby Adriatic; a wine shop gathering the best growers of Brda; a room devoted to sparkling wine; and a pool and terrace looking out over the vines toward the hills. It is less a hotel than a castle to borrow for a few days, in one of the loveliest corners of wine Europe.

The cellar is the heart of the house, and it has a quiet flourish: a custom viewing window set into the floor, through which you can look down into the vault and see the prized bottles laid away in the cool below. Ask to see it, and to taste from it — the wine shop gathers the finest growers of Goriška Brda, with a separate room given over to sparkling wines that runs all the way to Champagne. Few castle hotels let you peer into their treasure quite so literally.

Hotel Gredič is a castle you can have more or less to yourself. It stands among the vineyards of Goriška Brda, the wine region in Slovenia's far west that runs seamlessly into the Italian Collio, and it holds just seven rooms — which makes it less a hotel than a private castle let by the night. The building is centuries old, seat of the inventive Codelli barons, but the interiors are crisply modern, down to the hanging chairs that swing on ropes in the suites; the round tower and the old stone are the only insistence on its age.

 

What it is really about is wine and the table. The restaurant, recognised with a Michelin Plate, sends out five-course menus of local and Mediterranean cooking, herbs from its own garden, paired from a cellar of the best Slovenian and Italian bottles; the wine shop gathers Brda's top growers; and a dedicated room celebrates sparkling wine. Around it are a pool and terrace over the vines, a fireside salon and a library, and vineyards made for exploring by bike, which the staff will gladly arrange.

 

It suits couples, wine lovers and small groups who want intimacy and a sense of place over the bustle of a larger hotel — and it makes an ideal base for Goriška Brda and the Collio, with the towns of Friuli and the Adriatic within easy reach. Trieste airport is half an hour away, Venice and Ljubljana about ninety minutes. For a wine-country retreat with a castle's romance and a restaurant worth the journey, there are few addresses like it in this overlooked corner of Europe.
