Our editorial team books and dines at every property before listing. Hotels with strong food and a single competent restaurant don't qualify &mdash; this collection is reserved for properties where the kitchen is itself a reason to stay.

Accepted Answer

A fine dining hotel has built the property around the kitchen. The chef is named, the cuisine has a clear identity, the cellar is considered, and the restaurant draws non-resident diners as a destination in its own right. A hotel with a good restaurant treats food as a service department. This collection only includes the former.

Do all the hotels have Michelin stars?

Accepted Answer

No. Michelin recognition is one route into the collection but not the only one. Many of the strongest entries hold Falstaff, Gault Millau or World's 50 Best recognition, or carry award-winning regional chefs whose work hasn't sought Michelin status. A few are pure farm-to-table operations where the food is exceptional but the format sits outside the Michelin framework.

Inland Italian, French and Greek properties often deliver Michelin-equivalent cuisine at a fraction of city prices.
